Kickass Garnacha

For us, Garnacha is one of Spain’s finest grape varieties, producing ravishingly fruity wines with a wonderful spicy character. This is especially true when it’s old vine Garnacha like this blockbuster made by top producer Bodegas Aylés, based in Aragón.

El Burro is from estate grown 25 year old vine fruit grown on calcareous clay soil.  Typically it's early October when the grapes reach optimum ripeness.  They are machine harvested, de-stemmed and semi-crushed before a pre-fermentative maceration at low, controlled temperatures of 8-10ºC for four days. The must is then fermented in temperature controlled stainless steel tanks. 50% of the wine spends six months in oak barrels to add a vanilla smoothness and a toasty, spicy touch.
