TASTING NOTES
Color: Light yellow with green tints
Nose: Clean grassy aromas with fresh grapefruit and elderflower character
Palate: Dry, with striking varietal characteristics. Very zesty, with intense citrus
Finish: Excellent length
Food: Seafood, fish, white meat, pasta


VITICULTURE / VINIFICATION
Piggy Bank Sauvignon Blanc comes from the most northerly vineyards in Chile, which are planted at high altitudes – from 1,300 to 6,500ft. The Elqui Valley is blessed with a perfect climate, enjoying more than 300 days of sunshine a year and although average rainfall is less than 80mm, the snow melt and glaciers in the Andes ensure there is enough water to sustain the vines. Massive diurnal temperature fluctuation (from as low as 3 celsius in the morning to 30 celsius by mid afternoon) helps ensure good ripening, but retention of aromatics and no problems with mildew or rot. Harvest was by hand between 12-19th March in cool, foggy morning conditions. The grapes were selected, de-stemmed and cold macerated for 12 hours, then softly pressed and the juice fermented at low temperatures (14-16 celsius) in stainless steel tanks. Left in contact with the lees for 4 months, the wine underwent battonage on a weekly basis.

Mattia is a remarkable young talent, protégé of globetrotting winemaking guru Giorgio Flessati. He is expert in capturing the essence of varietals and getting the very best out of vineyards as diverse as Chile's Elqui Valley, Sicily and Trentino. He grew up in a small winemaking town called Faedo (Trentino, Italy) where there is a winery for every 100 inhabitants. No surprise therefore when Mattia chose to learn his craft at the prestigious Michele all'Adige College followed by a degree in Oenology from Udine. But, perhaps it was harder to predict he would end up pioneering in Chile's most remote and northerly vineyards!
