Arcillo - calcaire (chalk and clay soils) situated on the terraced slopes of the Calatayud DO at an altitude of 2300 - 3000 feet above sea level. Free draining soils combined with minimal rainfall and significant differences in daytime and night time temperatures give rise to wines with excellent color and distinctive varietal aromas.

Old, concentrated, bush vine fruit selected from 70 - 100 year old vines. Hand harvested, crushed and destemmed. Inoculated with Rhone yeasts. Temperature controlled alcoholic fermentation at 28o Celsius for 7 days with pumpovers and delistage for color and tannin extraction, followed by a short maceration. Pressed off skins using only free run wine, followed by full malolactic fermentation in tank and barrel. Old vine Tempranillo is also incorporated in the blend to add greater tannic structure, aging capacity and more fleshy character on the mid palate.

The mix of continental conditions and extremes of temperature during ripening has produced Garnacha and Syrah with intense color and varietal character of black fruits with complex notes of spice and pepper. The low yielding vines and the landscape of the valley slopes, which has many wild mountain herbs, give rise to the distinctive varietal aromas and notes of garrigue character in the wine.

Careful temperature controlled fermentation and the collaboration of New World trained winemakers and local knowledge has produced a complex and intense wine typical of the Calatayud area. 50% of the blend has 6 months aging in new
and used barrels.

Norrel Robertson, Master of Wine, is a Scotsman living in Calatayud, Spain where he is known locally as “El Escocés Volante” (The Flying Scotsman). He has worked in every aspect of winery operations in both Northern and Southern hemispheres. He studied Post Graduate Viticulture and Oenology in New Zealand.

“The 2007 Manga del Brujo was made by Norrel Robertson, MW, in partnership with the importer. It is a blend of 65% Garnacha, 15% Syrah, 15% Tempranillo and 5% Mazuelo aged for 5 months in French and American oak. The Garnacha component was sourced from vines over 100 years of age. Opaque purple-colored, it offers up a toasty, smoky bouquet with aromas of mineral,
black cherry, and blueberry. This is followed by a medium to full-bodied wine with an elegant personality, a silky texture, intense, savory blue and black fruit flavors, superb balance, and 2 - 3 years of aging potential. This pleasure-bent wine will offer prime drinking from 2011 to 2020.”
