VITICULTURE/VINIFICATION
25/45 year old vines, depending on varietal, are grown on stony and coarse textured soils with a yield of 4.5 tons per hectare. The climate consists of hot days and cool nights. The harvest took place during the middle of September. After harvest, the grapes are carefully hand-selected at the selection table to ensure a top quality wine. Each varietal is fermented separately in stainless steel tanks, macerated with the skins for 10 to 15 days at a controlled temperature of 28o C. The wines are blended after fermentation and given 3 to 4 months of lees contact prior to bottling. There was no barrel aging.
